Our focaccia is prepared using natural yeast to form a biga dough from Petra 1 and Ottimais flours. The dough is then mixed with a gel of Petra 9 flour, a stone-ground, wholemeal flour made from organically grown, 100% Italian, whole grain wheat. The dough obtained in this way maintains all the flavours, aromas and nutrients of the original wheat grain and produces a focaccia that is pleasantly crispy on the outside and delightfully soft on the inside.
